1 1/4 cups all-purpose flour
1/4 cup white sugar
2 tsp baking powder
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
1 cup milk
1/2 cup pumpkin puree
1 egg, beaten
1 tbsp vegetable oil
Shift flour, sugar, baking powder, cinnamon, and nutmeg together in a bowl.
Whisk milk, pumpkin, egg, and oil together in a bowl. Pour milk mixture into flour mixture and stir until moistened. Batter will be slightly lumpy.
Heat a lightly oiled griddle over medium-high heat to 350°F. Drop batter by large spoonfuls onto the griddle and cook until bubbles form and the edges are dry, 1 to 3 minutes. Flip and cook until browned on the other side, 1 minute more.
Repeat with remaining batter.
